The Market & Farm Tour (Sourcing the Spices)

To cook great meat, you need incredibly fresh spices. If you book our 7:30 AM Morning class, our chefs will take you through the Tegallalang traditional market to see how local butchers operate.

For all class times, we bring you to our family-owned organic farm in Taro Village. You take a guided walk through the gardens to harvest the raw ginger, chilies, and lemongrass needed to marinate and cook your meat.

Master the Base Gede (The Ultimate Meat Marinade)

Authentic Balinese meat gets its deep flavor from two distinct spice pastes. Working one-on-one with your private chef, you will use a heavy traditional stone mortar to pound fresh spices, garlic, and Terasi (shrimp paste) to create Base Gede and Base Rajang—the foundational marinades for roasting and boiling meats.

Take your meat-lovers class to the highest possible level. Before heading to our farm, we take your group to a traditional local Babi Guling producer. You will learn the authentic ceremonial process of preparing, stuffing with raw spices, and spit-roasting an entire suckling pig.

You will roast the pig over an open fire for the first hour, then transfer to our organic farm to cook the rest of your menu while the pig finishes cooking. End your day with a massive, traditional Babi Guling feast!
